Committed to bringing eco-friendliness and sustainability to Clapham Old Town combined with award-winning dining, The Pigs Head is the first site to be opened under the new ‘Antidote Projects’ brand, headed by Scott and Maria Hunter, previously owners of Noble Inns alongside Jack Ross and Michael Chan of The Pig and Butcher. Striving to run a carbon-neutral enterprise, the design and operation of the venue is centred largely around their reuse and repurposing of waste, their careful choice in suppliers and most of all their capability to farm their own produce from their upcoming Kent-based site.
Completely reconfiguring the layout of the venue, the previous simplistic kitchen was removed from the centre of the bar area and relocated to the rear. Seeing a completely new installation comprising of Altro flooring, hygienic wall cladding and stainless catering kitchen system as well as installing all-new services to accommodate the kitchen.
The new kitchen location also allowed us to take advantage of a service area to the rear, installing a cold room and butchery area, allowing on-site all beast butchery ensuring freshness and minimal waste, contributing towards cutting the companies carbon footprint. Incorporation of a composter system in line with the eco-friendly stance of the venue, allowing all waste to be recycled, with the compost being donated to local allotments and guests of the restaurant.
Situating a reclaimed scaffold board display unit between the newly divided bar and dining areas perfectly separated the two, whilst providing the ideal place to store and display the selection of jars containing excess ingredients pickled by the chefs and awaiting their presence in a future menu item subsequently removing food wastage.
A traditional style oak bar and a back fitting area featuring raised panel and pilaster construction and finished to an aged effect were manufactured and installed by ourselves and accompanied by a stainless bar system. Complimented by rustic wall cladding throughout the dining area and custom reclaimed lighting the design style successfully builds the vintage, reclaimed aura the venue aims to portray.
Restroom facilities were completely overhauled to accommodate a new entrance route following the reconfiguration of the internal layout. Installation of new wall panelling, natural floor tiling and bespoke manufactured reclaimed effect vanity units with feature mirrors as well as a new ventilation system reinstated a homely feel to the drab area.
Refurbishment of the existing sash windows to the upper floors alongside urgent building works to secure loose sections of the exterior brickwork, renewing of external pointing and extensive roof repairs brought the fabric of the building back to its former glory.
